Dish dal bafla is one of the popular Rajasthani food which is also famous in Malwa Regions (Ratlam, Ujjain, etc). In ancient days, bafla was baked over firewood and then served with ghee.Bafla is a variation of baati, the dough is same for both except for bafla which is boiled in water to get the tenderness before it is baked.

Ingredients:


For the Daal:

Tur Dal : 1/2 cup
Urad Dal  : 1/2 cup
Turmeric : 1/2 tsp
Cumin Seeds : 1/2 tsp
Garlic : 5-6 cloves
Onlion : 1 large
Tomato : 1 large
Red Chilly : 3 -4 pieces
Fresh Coriander Leaves : finely chopped
Fresh Lemon : 1
Ghee : 1 tbsp
Salt : as needed
Asafoetida (Hing) : A pinch

For the Bafla:

Wheat Flour (atta) – 2 cups
Semolina (rava) – 1/2 cup
Cumin Seeds (Jeera) – 1/2 tsp
Carom Seeds (ajwain) – 1/4 tsp
Cornflour – 1/4 cup
Turmeric – 1/2 tsp
Ghee – 1 cup
Salt – 1 tsp or as needed
Oil – 1/2 cup

Method :

For Dal:

Pressure Cook the dals (Tur, Urad, Garlic Cloves) with 4-5 cups of water, salt and turmeric.

Take a pan pour ghee and let it melt, add cumin seeds, red chilly, a pinch of hing, onion and tomato  fry till onion gets golden brown color.

Add dal mixture and more mater if needed, cook it for about 5-7 minutes.
Before Serving add coriander Leaves.

For Bafla:

1.) Mix Wheat Flour, semolina, cumin seeds, carom seeds, turmeric, salt, oil and make a stiff dough adding little water.
Divide the dough into small balls, and just press gently with your thumb to give it a circular shape. As shown in image:

2.) Take a large pan add water and a pinch of turmeric and bring it to boil. Drop bafla into boiling water and cook it for about 5 to 8 minutes.

3.) After that take it out from water and after some time these bafla balls get dried up on 10 minutes.

4.) Method for preparation in Gas oven : Just put the gas oven on flame, let it heat up for about a minute, then just place the boiled baflas on the grill and cover the lead. Let it cook for about 20 minutes and keep on turning them in some time interval. Check the color of baflas, if it is golden brown it is done, just remove the oven from flame.

5.) Method for preparation in Microwave Oven :  Pre-heat your electric oven or microwave to 180 degrees C and bake baflas for abot 15 minutes from one side and then after 15 minutes turn them over and cook from other side for another 15 minutes.

6.)  When they are done dip bafla in ghee, when they soak ghee remove and serve with daal.

Daal Bafla is ready to eat,,, Have it with dal, chutney and ladoos.
