Raj kachori is a famous Rajasthani Street food, it is very famous in whole North India. Raj Kachori is very spicy and yummy snacks which is famous among the food lovers who love to eat snacks full of spices and a bit of sweetness in it. The making of this snack take a bit preparation time for yours by soaking some ingredients overnight. One can try this recipe for breakfast and to impress their guest too.
All purpose flour/Maida : 1 1/2 cup
Semolina/Suji : 1/2 cup
Curd/Yogurt/Dahi : 1 Cup
Green Gram/khadi Moong (Soaked) : 1 Cup
Boiled Mashed Potatos/Aalu : 1 Cup
Green coriander/Hara Dhaniya : 2 tsp
Green Chutni/Hari chutni : 1/2 cup (Procedure is given below)
Tamarind chatni/ Imli ki chutni : 1/2 cup (Procedure is given below)
Red Chilli / Laal Mirch Powder : 1 tsp
Salt : 1 tsp
Jeera Powder : 1/2 tsp
Chat Masala : 1/2 tsp
Water to neat the dough
Oil for deep Fry
Green Chatni / Hari Chatni :
Take green chillies – 3
Green coriander leaves – 1/2 cup
Ginger – 1/2 inch
Garlic Cloves – 2
Method : Put all ingredients into a blender and blend it to a fine paste. Our green chatni is ready.
Method to make Raj Kachori :
To make raj kachori firstly we need to prepare the poories or kachori base and then we need to prepare the fillings. Lets see the procedure one by one..
1.) Firstly lets start with dough, neat the dough by adding all purpose flour, 2 tsp oil, some salt and water. Now just cover the dough with a wet kitchen towel., and keep it aside for 20 minutes.
2.) Meanwhile lets prepare the khadi moong filling – switch on the flame take a pan and put 1 tsp oil in it, when the oil is hot put cumin seeds in it then add the soaked green gram in the oil, stir it well and add some salt to taste in it and cover it for 2 minutes. After 2 minutes the green gram is ready for filling.
3.) After 20 minutes lets make the kachori poorins by dividing the dough in equal parts and by making the poories with the help of rolling pin. Keep a pan with oil for deep fry and switch on the flame. When the oil is hot just put the poori in the oil and fry it in lower medium flame. after cooking one side just flip the poori to cook it from other side. All poories are done.
4.) Now lets make the Raj Kachori by filling the poories : firstly break the poori from center and put mashed potatoes in it then add the khadi moong which we made earlier, then add the curd or yogurt, then add sev, then some green chatni followed by tamarind chatni, then add jeera powder, chart masala, red chilli powder, sprinkle some chopped green coriander leaves and a pinch of salt.
Tadaa our raj kachori is ready,, Just serve it to your loved ones and enjoy!!
