Stuffed brinjal or Baingan Masala is a very easy and regular recipe. Stuffed Brinjal will go with Chapati, Paratha or Rice.
Small Brinjals (Chote Baingan) : 6
Onion (Pyaz): 2 medium size
Garlic (Lehsun) : 6 – 7 (Clove)
Ginger (Adrak) : Small Piece
Turmeric Powder (Haldi) : 1/2 tbs
Coriender Powder (Dhaniya) : 1 tbs
Red Chilly Powder (Laal Mirch) : 1 1/2 tbs
Garam Masala : 1/2 tbs
Oil : 3 tbs (or as needed)
Salt : 1 1/2 tbs (or as needed)
Cumin Seeds (Jira) :1/2 tbs
First prepare paste of ginger, onion and garlic. Then take a container put 2 tbs oil and let it heat first.
Add some Cumin seeds and then fry the onion garlic paste in it. Cook the paste in slow flame untill it gets golden brown color. After that take a small container and make paste of turmeric powder, coriender powder, red chilly powder, garam masala and mix it with water.
Add this paste in Onion garlic paste and let it cooks as well.
In the mean time,clean the brinjal and remove the stem, do not cut all the way down.
When it seems the paste is well cooked add Salt as u needed mix it and then rmove it from container.
Now let the paste cool and then stuff the paste into brinjal.
Take a Pan, heat oil and slowly place the stuffed brinjal in it and cover the pan, cook it on slow flame. After 5 mins flip them to other side and cook thoroughly. Repeat the same till u cover all the areas and is perfectly cooked.
Stuffed Brinjal is ready,,, Remove from Pan and place it on serving plate.
